Double Dessert Friday!

Greetings all! Doing a double recipe post today! Two versions of one kind of recipe!
Chocolate Chip cookie cup s'mores. I have seen two variations.
First version with a muffin pan Mini Chocolate Chip Cookie S'mores
Second version with a muffin top/whoopie pie pan Deep Dish S'mores Cookies

For those that like to make things from scratch this is totally fine Here is a quick recipe for the from scratch cookie dough
MUFFIN VERSION! 
YOU WILL NEED:
One bag of marshmallows or jumbo marshmallows
3 hershey bars (or bar of chocolate cut into equal sizes)
1/2 cup shortening
1/4 cup white sugar
1/2 cup brown sugar
1/8 teaspoon salt
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1 1/4 cups flour
12 ounces chocolate chips
1/2 cup nuts (can be left out)
1 egg, well beatenThis is for 30 - 40 cookies. IF you buy the tube then one bag of marshmallows and ONE hershey's bar
For those who do NOT want to use the from scratch,a premade cookie dough tube works just as well.


Directions:

1. Cream shortening then add white sugar, brown sugar and egg.
2. Dissolve baking soda in one tablespoons of HOT water and then add.
3. Add flour, salt, vanilla and mix well.
4. Add nuts and chocolate chips, nuts (OPTIONAL) and mix again


It stops here because this is where the dough will go either into the muffin pan or whoopie pie tin.
For the muffin pan version:
Preheat oven to 350, spray the muffin pan with nonstick spray or whichever non stick preference used (some use crisco, some rub oil on the pan, whichever works for you)
Place a tablespoon of dough in each cup which should fill about half the space.
Bake 10 to 12 minutes and remove.



While waiting for the cookies to bake, gather enough marshmallows as they will be cut in half.
IE if you have a 12 slot muffin pan, you will only need 6 marshmallows as once they are cut in half there will be enough for 12.
It works well if you cut across the center of the marshmallow.
THIS IS IMPORTANT, once the cookies are done baking, remove, place half a marshmallow for each cup and put in to broil. WATCH CAREFULLY it shouldn't take more than a minute!
REMOVE and press in ONCE Piece of chocolate per cookie/marshmallow. Let them cool then remove with a knife or other utensil.



WHOOPIE PIE/MUFFIN TOP VERSION
Same as before with the cookie dough from scratch which is a better idea, otherwise you will need to let the tube of dough thaw to be able to mold enough to flatten out to fit the muffin top/whoopie pie tin slots.
Spray the pan down with non stick stuff or whichever way you do it.
This will require 2 Bars of chocolate!

The original blog post calls to put mini marshmallows and chopped chocolate bits but that is optional. I figure its already chocolate chip cookie dough if you want it to be full on s'mores that is fine. However I left the mini marshmallows and cut chocolate out.

Put about 1/3 of the cookie dough in each circle because it will rise, DO NOT FILL IT.
 
Again oven to 350 degrees, 10-12 minutes. And with this JUST before they are done, like one minute left (or just before the cookies start browning) cut the marshmallows in half, press one to each cookie and WATCH CAREFULLY. Again the one minute or watch closely until the marshmallow is puffed enough to preference. Remove and immediately press chocolate to cookie and let cool.
With this version its two rectangle pieces together per cookie instead of one.
