Candy Melt Apples and S'Mores Cookies UPDATES

Greetings all this is Xeronium filling in for miss Lexia/lcponynerd today. She had this all set and ready to post, I just came in, did some minor editing and posted for her!

Today's post is follow up pictures of the Candy Melt coated apples and S'mores cookies baking.
Double Dessert Friday Post

Let us begin with the apple process first!
Purchased 3 each of Pink Ladies and Gala Apples along with craft sticks. The craft popsicle sticks are shorter but cheaper and more for your dollar. Plus they were made to be as smooth as possible so less chance of splinters.

Was planning on purchasing more at a later date as these were going to be experiments.

Next as the recipe calls for, food coloring and at least 3 table spoons of vegetable or coconut oil per candy melt batch. I also threw in a food flavoring of just a hint of mint.
I chose yellow, red and blue. I added a little bit of green food coloring to the red and yellow so that I would have a purple and green candy melt. The purple turned out to be more of a ruddy brown. That is just fine as the apples will still taste delicious!

Veggie oil, green food coloring and mint extract. WARNING, MINT EXTRACT IS VERY POTENT. AT MOST YOU WILL ONLY NEED JUST two drops. NO MORE than that unless the recipe calls for more.

As you can see the red became a ruddy brown odd colored purple. Some light green and just enough blue for two apples. I set aside the bowl of extra candy melt for later as I planned to make use of it if there were extras for the next set to bake.

And here we have the cooled apples with candy melt! Technically they could be a neon rainbow dash rainbow apples in this order but meh. Joshua suggested for a future attempt get rainbow colors to make zap apple candy coated apples. Something to attempt.

Second part, S'mores cookies in two different styles.

I had my muffin pan and whoopie pie pan. Figuring it would be easier I got the tub of cookie dough, two hershey bar packs and one bag of regular sized marshmallows.

Here you can see the muffin pan and whoopie pie pan. Both filled to one third. It doesn't look like it but the whoopie pie is one third filled i just used the spoon to spread out the dough to fit the cookie holes.
While waiting for the cookies to bake I cut up some marshmallows. I figured cut down the center, then realized it would be better if I cut each one in half that way the round portion looks better instead of half of a marshmallow

As instructed pulled the whoopie pie pan out at the last minute and added the marshmallow pieces. HOWEVER I did not pull it out until i was sure the edges were brown so it took about 11 minutes. The last minute was to watch the marshmallows. I did put it on broil but that didn't do much as I forgot to move the baking rack closer to the top. OOPS. Oh well the gooey effect was still achieved.

As you can see, the chocolate melted within seconds of being placed. Looking good so far!

Same thing for the muffin version. It was easy to push down as the middle was still soft. These took the full 12 minutes plus an extra minute for the marshmallows. So pushing the marshmallow in then the piece of chocolate made it like a deep dish cookie which was great as that allowed it to cool more easily.
The marshmallow may not have been broiled but the gooey stretchy awesomeness was still achieved!
As I had more than enough I separated some to give to my neighbors! What is seen here is what is left over. As there were still marshmallows, some chocolate and candy melt left over I did another experiment!
 Candy melt coated MARSHMALLOWS!
Make sure you reheat the candy melt as it does cool off and harden some if left unattended.
Just place the marshmallow in.
Turn it a little and pop it out, there will be some of a cling effect leaving a little tip but that is all right.
I had enough candy pieces left to make 6 candy coated chocolate marshmallows and 6 candy coated. As there was just enough blue candy melt for the two apples there was none left over, thus why just the two colors shown. As I did add just a drop of mint extract the chocolate mint aspect lingers there. MMMM. I will state again mint extract is VERY POTENT. With mine I did not need any more than ONE DROP per candy melt batch.
And here is the finished result, hope it turns out well! Will post the results in my next blog. Next recipe blog I will be attempting a SUGAR FREE version so those with diabetes can enjoy! Thank you for reading!
