Greetings all! Today's post is about some warm or quick winter snacks for the cold weather! I realize not everyone is getting the same weather or that our winter is your summer, either way here they are!
Peppermint Hot Chocolate:
This one is simple!
Get the hot chocolate you like, and what ever is needed to prepare it. WAIT! IMPORTANT STEP HERE! Get some candy canes or peppermints. About 1-2 candy canes per mug/cup and about 2-3 peppermints per mug or more per preference.
Lay the candy canes or peppermints on a baking dish, or on some aluminum foil or wax paper. Any flat surface with something to protect it. Take a hammer or mallet or actually a heavy mug or item and crush the candy canes. The candy canes crush way easier than the peppermints.
CRUSH THE Candy canes BEFORE making your hot chocolate, now as you are making your hot chocolate you can add the crushed parts during the preparation or at the end. It is up to you, the end result is the same, minty hot chocolate! OR if you really can't crush it up, just take a candy cane or two peppermints and stir it in. If you are going to do the stir method make sure the hot chocolate is REALLY hot so that the mints melt well enough before its sippable.
Chocolate Peppermint Marshmallows:
This one is also easy!
You will need:
- jumbo marshmallows
- 1-2 boxes of MINI candy canes of preference (they don't all have to be the same flavor!)
- 1-2 boxes of regular sized candy canes for crushing
- chocolate to melt or candy melts (either 2-3 bars or ONE bag of candy melts)
- baking sheet or something to lay the marshmallows on to dry (wax/parchment paper preferably)
If you chose several flavors get the ones you want crushed and on the marshmallows ready.
- Crush the flavor you want going on the marshmallows separately on parchment paper, either with a hammer or heavy item as candy canes are EASY to crush. About a box worth of crushed candy canes on the sheet should make enough for about 12 -20 marshmallows. Set it aside for now.
- Get the number of marshmallows and mini candy canes you want in EQUAL AMOUNTS ready on another sheet of wax or parchment paper. You can insert the mini candy canes now OR AFTER dipping the marshmallows.
- Melt your chocolate in a microwave safe bowl in 20-30 second increments.
- Dip the marshmallow in the melted chocolate, then roll the marshmallow in the crushed candy canes and then set on the wax or parchment paper to cool and harden and viola! Quick Snack!
Rice Crispys Treat cookies or Assorted Snacks:
This one takes longer but somewhat quick to do.
Get the items needed for your rice crispy mix. You can do regular, or chocolate, or add food coloring, or even the fruity pebbles version.
Spread the rice crispy mix into a shallow pan and get your cookie cutters out. Its almost like cookie dough but you need to work fast if you are going to get as many from this as you want.
ALSO HAVE a sheet of parchment paper out to let the shapes sit. Cut out the shapes from the cookie cutters that you want, and as many as you want, then reform the remaining crispies and continue until there is none left or enough to fill a cookie cutter. Set each shape aside to cool.
OR YOU CAN HAND SHAPE THEM YOURSELF!
And now you have rice crispy christmas shapes to decorate! As shown in the pictures, you can decorate with which ever candy of choice for the ornaments or frosting for the trimming.
The last is my favorite and most easiest in creation!
Mint Brownies!
Basically make the brownies as you would per recipe or instructions, and add crushed peppermint or candy canes either IN the mix, or on top right after you pull the brownies out.
For me, i like making my brownie cupcakes, so its easier for me and my family to eat and not have to worry about cutting them out of the pan. This is personal preference mind you.
These show both versions, peppermints or candy canes mixed in the batter and sprinkled on top. You don't have to do both versions, again it is per preference. I would either crushed andes mints or andes mint chips to mix and crushed candy cane on top.
